How to Freeze Elderberries

Elderberries, tart, purple-black fruits, grow in clusters on small, shrublike trees. The berries are eaten raw, served over yogurt or ice cream, or incorporated into pies, wine, sauces, jams or jellies. The berries are low in calories and rich in potassium, vitamins A and C, and fiber. Freezing fresh, ripe elderberries, either sweetened or unsweetened, is an effective way to preserve their flavor and nutritional content.
