Although scallions are members of the onion family and look like small onions, they are differentiated by their mild flavor and their shape, which is long and straight with no bulb at the end. However, young leeks and immature onions, eaten before the white base develops into a bulb, are often referred to as scallions and are used the same way. Dried scallions are used in spreads, dips, baked dishes and soups.
