Tofu, also known as soya curd, is a common Asian food. To make tofu, you curdle soya milk with nigari, a coagulant. Although tofu alone can be bland, it absorbs spices and other flavors well, which makes it a good addition to stir fries and other dishes, such as kabobs. Kabobs originated in Turkey with lamb skewered and grilled. Today's kabobs include any type of meat, seafood and vegetables.
