Butternut squash is a rich, creamy, full-flavored winter squash with generous quantities of vitamin A, potassium, magnesium, fiber and other important nutrients. Make butternut squash puree when the squash ripens in late summer or early autumn. Pureed squash keeps in the refrigerator for three days and retains its quality in the freezer for up to two months. Freeze the squash puree for use in busy-day casseroles or soups, or use the puree as a nutritious baby food.
