Today, fajitas are a staple on the menus of most Mexican-American restaurants, but the dish doesn't have the long history that other Mexican foods such as tacos do. Workers on Texas ranches created fajitas using the tough strips of skirt steak they received as part of their payment. Skirt steak is still a common fajita filling, but other meats have risen in popularity as well.
