Sometimes called leatherjackets because of their tough skin, finescale triggerfish are plate-shaped brown fish with large spiky fins. The leathery skin and sharp spines make preparation tricky. But once cooked, finescale triggerfish flesh is mild, fresh and slightly sweet -- similar to pompano or flounder.
